Ingredients
For the Soup:
1 pound shrimp, peeled and deveined
2 tablespoons olive oil
1 small onion, diced
3 garlic cloves, minced
2 fresh jalapeños, finely chopped (adjust for heat level)
1 teaspoon cumin
1/2 teaspoon smoked paprika
1/4 teaspoon chili powder
4 cups chicken broth
1 cup heavy cream
1/2 cup cream cheese, softened
1/4 cup lime juice (about 2 limes)
Salt and pepper, to taste
Optional Toppings:
Fresh cilantro, chopped
Sliced jalapeños
Crumbled queso fresco
Tortilla strips or crushed tortilla chips
Lime wedges
Instructions
Sauté the aromatics.
In a large pot, heat the olive oil over medium heat. Add the diced onion and cook for 3-4 minutes until softened. Add the minced garlic and chopped jalapeños, cooking for another 1-2 minutes until fragrant.
Season the soup base.
Stir in the cumin, smoked paprika, chili powder, salt, and pepper. Cook for 1 minute to release the spices’ aroma.
Add the broth and cream.
Pour in the chicken broth and bring the mixture to a gentle boil. Reduce the heat to low and stir in the heavy cream and cream cheese. Whisk until the cream cheese is fully melted and the soup is creamy.
Cook the shrimp.
Add the shrimp to the soup and simmer for 5-7 minutes until the shrimp turn pink and are fully cooked.
Finish with lime juice.
Stir in the lime juice for a fresh, zesty flavor. Adjust the seasoning with more salt and pepper, if needed.
Serve.
Ladle the soup into bowls and top with fresh cilantro, sliced jalapeños, crumbled queso fresco, and tortilla strips for added crunch. Serve with lime wedges on the side.
