Fluffy Vanilla Cupcakes with Buttercream Frosting

Ingredients

  • 1¾ cups (210g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1½ teaspoons baking powder
  • ½ teaspoon salt
  • ¾ cup (170g) unsalted butter, softened
  • 3 large eggs, room temperature
  • ½ cup (120ml) whole milk, room temperature
  • 2 teaspoons pure vanilla extract
  • ¼ teaspoon almond extract (optional)
  • 1 cup (226g) unsalted butter, softened (for frosting)
  • 4 cups (480g) powdered sugar, sifted (for frosting)
  • 2 tablespoons heavy cream (for frosting)
  • 2 teaspoons pure vanilla extract (for frosting)
  • ¼ teaspoon salt (for frosting)
  • Food coloring (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large mixing bowl, beat the butter and sugar together on medium-high speed for 3-4 minutes until pale and fluffy.
  4. Add eggs one at a time, mixing well after each addition, and then mix in the vanilla and almond extracts.
  5. Gradually add the flour mixture in three additions, alternating with the milk, mixing on low speed just until combined.
  6. Fill each cupcake liner about 2/3 full.
  7. Bake for 18-20 minutes, or until a toothpick comes out clean.
  8. Allow cupcakes to cool for 5 minutes, then transfer to a wire rack to cool completely.
  9. For the frosting, beat the softened butter until pale and creamy, add powdered sugar gradually, and mix in vanilla extract, salt, and heavy cream.
  10. Pipe frosting onto cooled cupcakes and add decorations as desired.

Notes

Replace all-purpose flour with gluten-free flour for a gluten-free version. Use plant-based butter for a dairy-free option.
