For the Sun-Dried Tomato Cream Sauce:
2 tablespoons unsalted butter
1 cup heavy cream
½ cup chicken or vegetable broth
½ teaspoon salt
¼ teaspoon black pepper
½ teaspoon Italian seasoning
½ cup grated Parmesan cheese
1 teaspoon lemon juice
¼ teaspoon lemon zest
For Garnish (Optional):
Extra Parmesan cheese
Fresh basil or parsley
Crushed red pepper flakes

Instructions

1️⃣ Cook the pasta: Bring a large pot of salted water to a boil. Cook spaghetti until al dente, according to package instructions. Reserve ½ cup of pasta water, then drain and set aside.
 
2️⃣ Sauté the aromatics: Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes, sautéing for 30 seconds until fragrant.
 
3️⃣ Cook the tomatoes & spinach: Stir in chopped sun-dried tomatoes and cook for 2 minutes. Add spinach and sauté for another 1-2 minutes until wilted.
 
4️⃣ Make the creamy sauce: Push the veggies to one side of the pan and melt butter in the empty space. Pour in heavy cream and broth, then stir in salt, black pepper, and Italian seasoning. Simmer for 3-4 minutes.
 
5️⃣ Melt the Parmesan & add lemon: Stir in grated Parmesan, lemon juice, and lemon zest. Simmer for 1 more minute until thickened.
 
6️⃣ Combine pasta & sauce: Toss the cooked spaghetti into the sauce, stirring to coat. If needed, add reserved pasta water to adjust the consistency.
 
7️⃣ Serve & garnish: Plate the pasta and top with extra Parmesan, fresh basil, and red pepper flakes. Enjoy this rich, creamy, and tangy dish!
